Peanut Butter Easter Egg
Peanut Butter Filling:
- 1 cup peanut butter
- ½ cup peanut butter powder
- ½ cup almond flour
- ¼ cup honey
- Chocolate Coating:
- 2 cups chocolate bars, melting chocolate, or chocolate chips
- 1 tablespoon coconut oil
Preparation:
- In a large bowl or mixer, blend together the peanut butter, almond flour, peanut butter powder, and honey until the mixture is smooth and well combined. Using a cookie scoop, portion out the peanut butter mixture into even-sized balls. Shape each ball into an egg shape using your fingers. Arrange the peanut butter eggs on a baking sheet lined with parchment paper and place them in the freezer for an hour to firm up.
- In a microwave-safe bowl, slowly melt the chocolate chips and coconut oil until smooth.
- If you prefer, you can also use a double boiler method for melting the chocolate (see note below).
- Once the chocolate is melted, dip each peanut butter egg into the chocolate, using a spoon to ensure it is fully coated. Use two toothpicks to carefully lift the eggs out of the chocolate and place them back on the parchment paper to set.
- Allow the chocolate to harden before serving.
